La Table de Colette - Michelin-recommended, but not yet starred.The restaurant is built around an eco-friendly concept: 100% of its electricity comes from renewable sources, supplied by “Enercoop” (wind, solar, water, biomass). This way, no CO₂ emissions are produced from fossil fuels during the cooking process.Inside — modern minimalism, natural materials, and a touch of eco charm. A large mirror on the wall creates the illusion of a much more spacious room.Guests are offered several tasting menu options; we went for “The Garden by the Ocean.”A plant-based menu, gluten-free and lactose-free.The carbon footprint — the amount of CO₂ emitted during the production and preparation of food — is less than 1,600 grams, about four times lower than a traditional fine-dining dinner.Our set:• smoked butternut soup• carrot served in different variations• salmon with zucchini garnish• dessert 1 — fig, lingonberry, almond biscuit, icy crumble• dessert 2 — blackcurrant, honey, olive oil, biscuit• and a few mini desserts — biscuits to finishOverall, an interesting concept and a pleasant atmosphere. The dishes were good (though, in my opinion, the mini biscuits at the end were a bit too much — after a full tasting, there’s really no room left for “bread on top”).The staff seemed a bit unsure and lost at times - I think they just need a bit more training.We disagreed on whether the restaurant will get its first star.I believe it will (the eco concept might help them), while my friend thinks they’re not quite there yet.Time will tell!
